By: Brenda Franklin

                                                                  LAVENDER HOUSE HOMEMADE MUESELI

Makes about 8 cups.

Dry Ingredients:

3 cups Jungle oats

Three quarters of a cup of a variety of seeds (linseed, sesame, poppy, pumpkin, chia, sunflower, flax etc)

Half a cup of Jungle Oatbran

Half a cup of flaked almonds plus any other nuts you want to use

Half a cup of shredded coconut

To add later (after baking) - half a cup of raisins and dried cranberries.   (You can also add other dried fruit at this point - dried banana slices, dates, etc)

Wet Ingredients:

a quarter cup of pure Maple syrup (Woolworths has a good one)

a quarter cup of olive oil

Half a teaspoon of vanilla essence

Method:

1. Preheat the oven to 150 degrees Celsius.   Line a baking sheet with baking paper or foil.

2. In a large bowl, combine all the dry ingredients and mix well.

3. In a small bowl, mix the wet ingredients.

4. Add the wet ingredients to the dry ingredients and mix well (use your hands) until all the ingredients are coated.

5. Spread it evenly on the baking sheet and bake in the centre of the oven for 40 minutes, stirring it after 20 minutes.

6. When it comes out of the oven, add half a cup of raisins and cranberries.     You can add other dried fruit too, if you choose - dried banana, dates etc.

ENJOY!
